Cajun Dry Rub


I absolutely adore spicy flavorful foods; the tastes and aroma seems to just wake up all the senses. Although the hubby likes a touch of spice as well, his is a little more subdued than mine (except for wings which he loves HOT!) I must admit Adam has been known to get a little nervous when he sees me whipping out all the spice jars in the kitchen! When I was developing this Cajun Rub he predicted that I would go crazy but I’m happy to say that he was wrong – well half wrong!

This dry rub combines the classic Cajun flavors of paprika (although mine uses smoked paprika), cayenne and chili powder with newer additions such as oregano and thyme which help to round out the recipe and add greater depth of flavor. The end product is a spicy yet well-rounded dry rub that can go on chicken, meats, shrimp and salmon.

This Cajun Rub is very easy to create. Just combine smoked Spanish paprika, onion powder, garlic powder, cayenne, oregano, thyme, chili powder, cracked black pepper and kosher salt in a small mixing bowl and whisk together. This rub recipe will make 2-3 servings. Store any extra dry rub in an airtight container. It will stay good for 8 months to 1 year. (When I make this rub I always quadruple the recipe so that I can store it and have it available whenever I need .)

Note: Although it already contains salt, when using this Cajun Rub I always sprinkle whatever I am cooking with a touch more kosher salt before I add the rub. I do this to make sure that the item is appropriately seasoned.


I love to pair my go-to meals like Cajun Chicken with roasted sweet potatoes or saffron brown basmati rice. I also add veggies like roasted asparagus or sautéed green beans with garlic to the dish. It’s a very versatile recipe that you can pair with either sweet or spicy side dishes.

  • ¾ tablespoon smoked Spanish paprika
  • ¾ tablespoon onion powder
  • 1 tablespoon granulated garlic powder
  • ¾ tablespoon cayenne
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ¼ teaspoon chili powder
  • ½ teaspoon cracked pepper
  • 1 teaspoon kosher salt
  1. Combine all ingredients in a bowl and whisk together.
  2. Store in airtight container
