The end of summer is approaching fast and, if you’re lucky, by now you’re probably overflowing with fresh basil from your garden. The usual thing to do is just to make Basil Pesto and call it a day. As delicious as that sounds, sometimes it can become a little monotonous – sorry Pesto lovers. For those who want to incorporate a little flavor excitement into their lives, I have the perfect summertime alternative…my Creamy Basil Lime Dressing. This versatile dressing is zesty, healthy, bold and just as luscious as your beloved Pesto. Better yet, my dressing uses not one but several different and mouthwatering summer ingredients in it as well – talk about the ultimate summertime dressing!!!
What I love about this Basil Lime Dressing is that it’s fresh tasting and contains all of the delicious creaminess without all of the unhealthy calories and fat normally associated with thick decadent dressings. Instead of using mayo or eggs to add texture I use creamy ripe avocados which, in my opinion, add incredible body, as well as an unassuming flavor that allows the basil and lime to take center stage.
And speaking of center stage, bright and citrusy lime is used alongside peppery basil to pack a zesty punch and create the unique citrus mint flavor palette on which this dressing is based upon. Floral honey is drizzled in to add the perfect amount of sweetness while fresh orange is squeezed to further enhance that sweet and sour goodness – I told you the flavor was bold!
Let me tell you, the fragrance of this dressing alone will have you wanting to put it on everything…salads, tomatoes, mozzarella, chicken, fish…and whatever else you can think of!
This Creamy Basil Lime Dressing is so incredibly easy to create. It literally takes 5 minutes. Just add all of the ingredients into a food processor and purée until a smooth consistency is established.
Serve immediately or store in an airtight container in the refrigerator. This dressing will last for several days in the fridge…that is if your family doesn’t get to it first!
- ¼ cup fat-free greek yogurt, (brand: Wallaby 0% fat)
- ½ avocado, skin removed
- ½ teaspoon lime zest
- 2 tablespoons freshly squeezed lime juice
- 1 (packed) cup fresh basil leaves
- ½ orange, freshly squeezed orange juice
- ½ teaspoon kosher salt
- ½ teaspoon fresh cracked black pepper
- 2 teaspoons dark amber honey
- ¼ cup water
- 2 teaspoons extra-virgin olive oil
- Add all of the ingredients into a food processor and puree until a smooth consistency is established. Serve or store in an airtight container in the refrigerator. This dressing will last for several days in the fridge.
